Keto Cauliflower Mac and Cheese

 

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Steam or boil the cauliflower florets until they are tender but not mushy, about 5-7 minutes. Drain and set aside.

  3. In a saucepan over medium heat, combine the heavy cream, cream cheese, and minced garlic. Stir until the cream cheese is fully melted and the mixture is smooth.

  4. Stir in the Dijon mustard, paprika, salt, and pepper. Adjust the seasonings to your taste.

  5. Remove the saucepan from the heat and stir in 1.5 cups of shredded cheddar cheese and the grated Parmesan cheese until the mixture is well combined and creamy.

  6. In a large baking dish, spread out the cooked cauliflower florets.

  7. Pour the cheese sauce over the cauliflower, making sure it's evenly coated.

  8. Sprinkle the remaining 1/2 cup of cheddar cheese on top of the cauliflower.

  9. Bake in the preheated oven for about 15-20 minutes or until the cheese is bubbling and slightly golden.

  10. Optionally, garnish with chopped fresh parsley before serving.

  11. Serve your Keto Cauliflower Mac and Cheese hot and enjoy!
