Ingredients:

  • 2 ripe bananas
  • 4 large eggs
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened almond butter
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • Optional: Chopped nuts or sugar-free chocolate chips for added texture

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a blender or food processor, combine the ripe bananas, eggs, almond flour, coconut flour, almond butter, melted coconut oil, vanilla extract, baking powder, cinnamon, and a pinch of salt. Blend until smooth.
  3. If desired, fold in chopped nuts or sugar-free chocolate chips into the batter.
  4. Pour the batter into the greased loaf pan.
  5. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
