Banana bread
Ingredients:
- 2 ripe bananas
- 4 large eggs
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened almond butter
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- A pinch of salt
- Optional: Chopped nuts or sugar-free chocolate chips for added texture
Instructions:
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a blender or food processor, combine the ripe bananas, eggs, almond flour, coconut flour, almond butter, melted coconut oil, vanilla extract, baking powder, cinnamon, and a pinch of salt. Blend until smooth.
- If desired, fold in chopped nuts or sugar-free chocolate chips into the batter.
- Pour the batter into the greased loaf pan.
- Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
