Broccoli-Cheese Soup
Ingredients:
- 4 cups fresh broccoli florets (about 2 medium heads)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 1/4 teaspoon nutmeg (optional, for added flavor)
- Olive oil for sautéing (optional)
Instructions:
Start by preparing the broccoli. Cut the broccoli into small florets and set them aside.
In a large soup pot, you can add a little olive oil or use non-stick cooking spray to prevent sticking. Sauté the chopped onions and minced garlic over medium heat until they become translucent and fragrant, about 3-5 minutes.
In the same pot, add the broccoli florets and chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes or until the broccoli is tender.
Use an immersion blender to blend the soup until it's smooth. If you don't have an immersion blender, carefully transfer the mixture to a regular blender in batches and blend until smooth. Be cautious when blending hot liquids.
Return the blended soup to the pot and place it over low heat.
In a separate small saucepan, melt the butter over medium heat. Once the butter is melted, stir in the flour to create a roux. Cook the roux for a minute or two, stirring constantly until it turns a light golden color.
Slowly whisk in the heavy cream, making sure there are no lumps. Continue to cook and stir until the mixture thickens, which should take about 3-5 minutes.
Add the roux and cream mixture to the broccoli soup and stir to combine.
Gradually stir in the shredded cheddar cheese, allowing it to melt into the soup. Stir until the cheese is completely melted and the soup is smooth.
Season the soup with salt, pepper, and nutmeg (if using). Adjust the seasonings to your taste.
Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld together.
Serve the broccoli-cheese soup hot, garnished with extra shredded cheddar cheese if desired.
