Chicken Parmigiana


Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh basil leaves (optional, for garnish

For the Marinara Sauce:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Instructions:

    To make the Marinara Sauce:

    1. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic, and sauté until they become soft and translucent.

    2. Stir in the crushed tomatoes, dried basil, dried oregano, salt, and pepper. Bring the sauce to a simmer, then reduce the heat and let it cook for about 20-30 minutes, stirring occasionally. Once done, set it aside.

    To prepare the Chicken Parmesan:

    1. Preheat your oven to 375°F (190°C).

    2. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness (about 1/2 inch). Season the chicken with salt and pepper.

    3. In three separate shallow dishes, place the flour in one, beaten eggs in another, and a mixture of breadcrumbs and grated Parmesan cheese in the third.

    4. Dredge each chicken breast first in the flour, then dip it into the beaten eggs, and finally coat it with the breadcrumb and Parmesan mixture.

    5. Heat the olive oil in a large ovenproof skillet over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes per side, or until they are golden brown and cooked through.

    6. Spoon some of the marinara sauce over each chicken breast and top with mozzarella cheese.

    7. Place the skillet in the preheated oven and bake for about 15-20 minutes or until the cheese is melted and bubbly.

    8. Garnish with fresh basil leaves if desired, and serve the Chicken Parmesan hot over spaghetti or on its own.
