Ingredients:

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh broccoli florets (about 2 medium heads)
  • 4 cups vegetable broth
  • 1 1/2 cups heavy cream
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional, but it adds a nice flavor)
  • Red pepper flakes (optional, for added heat)
  • Chopped fresh chives or green onions for garnish (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until they become soft and fragrant, which should take about 5 minutes.

  2. Add the fresh broccoli florets to the pot and stir them for a few minutes to coat them in the butter and onion mixture.

  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the broccoli is tender.
