Kladdkaka
Ingredients:
- 1 cup almond flour
- 1/4 cup cocoa powder (unsweetened)
- 1/2 cup erythritol or your preferred keto-friendly sweetener
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips (sugar-free or at least 70% cocoa)
Instructions:
Preheat your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.
In a mixing bowl, combine almond flour, cocoa powder, sweetener, and salt.
In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until well combined.
Fold in the dark chocolate chips.
Pour the batter into the prepared cake pan and spread it evenly.
Bake in the preheated oven for approximately 20-25 minutes or until the edges are set but the center is still slightly gooey.
Allow the kladdkaka to cool in the pan for a bit before transferring it to a wire rack to cool completely.
Once cooled, you can optionally dust the top with powdered erythritol for decoration.
