Tex-Mex Chili
Tex-Mex chili is a flavorful and hearty stew that combines elements of Texan and Mexican cuisine. It's known for its bold, spicy flavors and is often enjoyed with toppings like cheese, sour cream, and tortilla chips. Here's a basic recipe for Tex-Mex chili:
Ingredients:
- 1 pound ground beef
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 2 cans (15 oz each) of kidney beans, drained and rinsed
- 1 can (15 oz) of black beans, drained and rinsed
- 1 can (14.5 oz) of diced tomatoes
- 1 can (6 oz) of tomato paste
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Olive oil
- Toppings: shredded cheddar cheese, sour cream, chopped green onions, and tortilla chips
Instructions:
Brown the Ground Beef:
- In a large pot or Dutch oven, heat a bit of olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it's browned and no longer pink. Remove any excess fat.
Saute the Vegetables:
- Add the chopped onion, bell pepper, and minced garlic to the pot. Cook for about 5 minutes, or until the vegetables are softened.
Add Spices:
- Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and black pepper. Cook for a minute to toast the spices.
Combine Ingredients:
- Add the kidney beans, black beans, diced tomatoes, tomato paste, and beef broth to the pot. Stir well to combine all the ingredients.
Simmer:
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the chili simmer for about 30-45 minutes, stirring occasionally.
Adjust Seasoning:
- Taste the chili and adjust the seasoning as needed, adding more chili powder, cayenne pepper, or salt to achieve the desired level of spiciness and flavor.
Serve:
- Serve the Tex-Mex chili hot, garnished with shredded cheddar cheese, a dollop of sour cream, chopped green onions, and tortilla chips on the side.
Tex-Mex chili is a comforting and spicy dish that's perfect for warming up on a chilly day. You can also customize it by adding other ingredients like corn or jalapeños to suit your taste preferences.
