Vegan Chili
Vegan chili is a hearty and flavorful plant-based dish. Here's a basic recipe for Vegan Chili:
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 zucchini, diced
- 1 carrot, diced
- 2 (15 oz) cans of kidney beans, drained and rinsed
- 1 (15 oz) can of black beans, drained and rinsed
- 1 (15 oz) can of diced tomatoes
- 1 (6 oz) can of tomato paste
- 4 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
- Salt and pepper to taste
- 1 cup corn kernels (fresh or frozen)
- Juice of 1 lime
- Fresh cilantro, for garnish (optional)
Instructions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for a few minutes until they become fragrant and translucent.
Add the chopped bell peppers, zucchini, and carrots to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
Stir in the kidney beans, black beans, diced tomatoes, and tomato paste.
Add the vegetable broth, chili powder, cumin, paprika, and cayenne pepper. Mix well and bring the mixture to a boil.
Reduce the heat to a simmer and let the chili cook for about 20-30 minutes, allowing the flavors to meld and the vegetables to become tender.
Add salt and pepper to taste. Adjust the seasonings as needed.
Stir in the corn kernels and lime juice, and let the chili simmer for an additional 5-10 minutes.
Serve the vegan chili hot, garnished with fresh cilantro if desired.
