CARAMELS
Ingredients:
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 cup powdered erythritol or your preferred keto-friendly sweetener
- 1/4 cup water
- 1/2 teaspoon vanilla extract
- A pinch of salt

In a saucepan, combine the heavy cream, butter, powdered erythritol, and water over medium heat.
Stir continuously until the butter and sweetener are completely melted.
Bring the mixture to a simmer, stirring frequently. Allow it to simmer for 15-20 minutes or until it reaches a deep amber color. Keep an eye on it to prevent burning.
Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt. Be cautious, as the mixture will bubble when the vanilla is added.
Let the caramel cool for a few minutes in the saucepan, and then transfer it to a glass jar or container for further cooling.
Allow the caramel to cool completely before using. It will thicken as it cools.
Once fully cooled, you can cut the caramel into small pieces and wrap them in parchment paper.
