Big Salmon Salad
Ingredients:
- 1 large salmon fillet
- 5 cups mixed greens (e.g., spinach, arugula, or lettuce)
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cucumber, diced
- 1/4 cup sliced black olives
- 1/4 cup crumbled feta cheese
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions:
1 Preheat your oven to 375°F (190°C). Season the salmon fillet with salt and pepper and place it on a baking sheet. Bake for 15-20 minutes or until the salmon is cooked through and 3 flakes easily with a fork. Let it cool, then flake into bite-sized pieces.
2 In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, cucumber, 5 black olives, and crumbled feta cheese.
3 In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to create the dressing.
4 Drizzle the dressing over the salad and

6 Garnish with fresh dill or parsley
