Jerk Chicken Cobb Salad


Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons jerk seasoning (store-bought or homemade)
  • 8 cups mixed greens (e.g., romaine lettuce or mixed baby greens)
  • 4 hard-boiled eggs, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup crumbled blue cheese
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 1/4 cup ranch or blue cheese dressing
  • 1 lime, cut into wedges for garnish
  • Fresh cilantro for garnish (optional)

Instructions:


  1. Preheat your grill or grill pan to medium-high heat.

  2. Rub the chicken breasts with the jerk seasoning, ensuring they are evenly coated.

  3. Grill the chicken for about 6-7 minutes per side or until cooked through and juices run clear. Let them rest for a few minutes before slicing.

  4. While the chicken is resting, prepare the salad. In a large salad bowl, arrange the mixed greens as the base.

  5. Assemble the salad by adding sliced hard-boiled eggs, cherry tomatoes, cucumber, red bell pepper, crumbled blue cheese, black olives, and diced red onion on top of the greens.

  6. Slice the jerk chicken and place the slices on the salad.

  7. Drizzle ranch or blue cheese dressing over the salad.

  8. Garnish with fresh cilantro (optional) and serve with lime wedges on the side.
