Fresh Tomato Soup











Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6-8 ripe tomatoes, coarsely chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves, chopped (for garnish, optional)
  • 1/4 cup heavy cream or coconut cream (optional, for added richness)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.

  2. Add the minced garlic and cook for another minute, until fragrant.

  3. Add the chopped tomatoes, carrot, and celery to the pot. Cook for about 10 minutes, stirring occasionally until the tomatoes begin to break down.

  4. Stir in the tomato paste, sugar, dried basil, and dried oregano.

  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20-30 minutes, or until the vegetables are soft.

  6. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, transfer the soup in batches to a regular blender, being cautious with hot liquids.

  7. Return the soup to the pot and season with salt and pepper to taste. If desired, add the heavy cream or coconut cream for added richness.

  8. Heat the soup for a few more minutes, but do not boil.

  9. Serve the Fresh Tomato Soup hot, garnished with chopped fresh basil leaves if you like. You can also pair it with a slice of crusty bread for a delightful meal.
