INGREDIENTS:

1.                  1/4 cup chia seeds

2.                  1 cup unsweetened almond milk (or any low-carb milk of your choice)

3.                  1-2 tablespoons keto-friendly sweetener (such as erythritol or stevia), to taste

4.                  1/2 teaspoon vanilla extract

5.                  Optional toppings: fresh berries, chopped nuts, coconut flakes

 

PREPARATION:

1.                  In a bowl, combine the chia seeds, unsweetened almond milk, keto-friendly sweetener, and vanilla extract. Stir well to combine.

2.                  Let the mixture sit for about 5-10 minutes, then give it another stir to prevent clumping. This helps ensure that the chia seeds are evenly distributed.

3.                  Cover the bowl with plastic wrap or a lid and refrigerate for at least 2-4 hours, or overnight. During this time, the chia seeds will absorb the liquid and create a pudding-like consistency.

4.                  Before serving, give the chia seed pudding a good stir to break up any clumps. If the pudding is too thick, you can add a splash of almond milk and stir until desired consistency is reached.

5.                  Divide the chia seed pudding into serving glasses or bowls.

6.                  Top with fresh berries, chopped nuts, or coconut flakes, if desired.
