Keto Coffee Cake
Ingredients:
For the Cake:
- 2 cups almond flour
- 1/3 cup coconut flour
- 1/2 cup unsweetened almond milk
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1/2 cup granulated erythritol or your preferred keto-friendly sweetener
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
For the Streusel Topping:
- 1/2 cup almond flour
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped pecans or walnuts
- 2 tablespoons melted butter
- 2 tablespoons granulated erythritol
- 1/2 teaspoon cinnamon
For the Glaze (Optional):
- 1/4 cup powdered erythritol
- 1-2 tablespoons almond milk
- 1/2 teaspoon vanilla extract
Instructions:
1. Preheat the Oven:
- Preheat your oven to 325°F (163°C). Grease an 8x8-inch baking dish or line it with parchment paper.
2. Make the Cake Batter:
- In a large bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, and salt.
- In another bowl, whisk together the melted butter, almond milk, eggs, erythritol, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until well combined.
