Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooking spray or additional melted butter for the pan

Instructions:

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In another bowl, whisk together the buttermilk, egg, and melted butter.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix; a few lumps are okay.

  4. Preheat a non-stick skillet or griddle over medium-high heat and lightly grease it with cooking spray or a bit of melted butter.

  5. Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake.

  6. Cook until bubbles form on the surface, and the edges look set, usually about 2-3 minutes.

  7. Flip the pancakes and cook for another 1-2 minutes or until they're golden brown and cooked through.

  8. Transfer the pancakes to a plate and keep them warm.

  9. Continue making pancakes with the remaining batter.

  10. Serve your pancakes with your favorite toppings, such as maple syrup, fresh berries, whipped cream, or a dollop of keto Greek yogurt if you prefer. Enjoy!
