White Bean & Avocado Sandwich
Ingredients:
For the White Bean Spread:
- 1 (15-ounce) can of white beans (cannellini or Great Northern), drained and rinsed
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
For the Sandwich:
- 4 slices of your choice of bread (whole grain, multigrain, or your preference)
- 1 ripe avocado, sliced
- 1 small red onion, thinly sliced
- 1 cup fresh spinach leaves or arugula
- 1 tomato, sliced
- 4 slices of your favorite cheese (such as Swiss, cheddar, or provolone)
- Dijon mustard (optional, for added flavor)
Instructions:
White Bean Spread:
In a food processor, combine the drained and rinsed white beans, minced garlic, olive oil, lemon juice, dried oregano, salt, and black pepper.
Blend the ingredients until you have a smooth and creamy white bean spread. If it's too thick, you can add a little more olive oil or water to reach your desired consistency.
Assembling the White Bean & Avocado Sandwich:
Take a slice of bread and spread a generous amount of the white bean spread on it.
Layer slices of avocado on top of the white bean spread.
Add a few slices of red onion for a bit of zing.
Place a handful of fresh spinach leaves or arugula on the sandwich.
Add a slice of tomato for a refreshing touch.
If you like, place a slice of your chosen cheese on top of the tomato.
If desired, spread some Dijon mustard on the inside of another slice of bread and place it on top of the sandwich, creating the top layer.
You can serve the sandwich as is or, for an extra burst of flavor, heat it in a panini press or a heated skillet for a few minutes until the cheese melts, and the bread is toasted.
Cut the sandwich in half and serve it immediately.
