Aebleskiver



Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • Butter or oil for greasing the pan
  • Fruit preserves or powdered sugar for serving (optional)

Instructions:

  1. Preheat the Aebleskiver Pan:

    • Preheat your Aebleskiver pan over medium heat. Add a small amount of butter or oil to each mold.
  2. Prepare the Batter: a. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. b. In another bowl, whisk together the buttermilk, eggs, and melted butter. c. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.

  3. Cook the Aebleskiver: a. Spoon batter into each mold, filling it about two-thirds full. b. Allow the Aebleskiver to cook until the edges begin to set, and the bottom is golden brown. Use a skewer or fork to flip each pancake ball to the uncooked side. c. Continue rotating and flipping the Aebleskiver until they are evenly cooked and golden brown on all sides.
