Crispy Fish & Chips
Ingredients:
For the Fish:
- 4 white fish fillets (such as cod or haddock)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cold sparkling water
- Vegetable oil for frying
For the Chips:
- 4 large potatoes, peeled and cut into thick strips
- Salt to taste
- Vegetable oil for frying
Instructions:
Prepare the Fish: a. In a bowl, mix the flour, baking powder, salt, and pepper. b. Gradually whisk in the sparkling water until you have a smooth batter. c. Heat the vegetable oil in a deep fryer or large, deep pan to 350°F (180°C). d. Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it into the hot oil. e. Fry for 4-5 minutes on each side or until the fish is golden brown and crispy. Remove and drain on paper towels.
Prepare the Chips: a. Rinse the potato strips under cold water to remove excess starch. b. Pat the potatoes dry with a paper towel. c. Heat vegetable oil to 325°F (160°C) in a deep fryer or large, deep pan. d. Carefully add the potato strips in batches and fry until they are golden brown and crispy, about 5-7 minutes per batch. e. Remove the chips with a slotted spoon and place them on a paper towel-lined plate. Sprinkle with salt to taste.
