 Blue Chip Cookies



Keto Blue Chip Cookies Recipe:

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup erythritol or any keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, combine the almond flour, coconut flour, baking powder, and salt. Set aside.

  3. In a separate large bowl, cream together the softened butter and erythritol until light and fluffy.

  4. Add the vanilla extract and egg to the butter mixture and beat until well combined.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms.

  6. Fold in the sugar-free chocolate chips into the cookie dough.

  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.

  8. Flatten each cookie slightly with the back of a spoon or your fingers.

  9. Bake in the preheated oven for 10- minutes or until the edges are golden brown.

  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
