Ingredients:

  • 2 cups almond flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated erythritol or your preferred keto sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips
  • Optional: sugar-free candy eyes for decoration

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the softened butter and erythritol until smooth. Add the egg and vanilla extract, mixing until well combined.

  3. In a separate bowl, whisk together the almond flour, baking soda, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

  5. Fold in the sugar-free chocolate chips until evenly distributed throughout the dough.

  6. Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, leaving some space between each cookie.

  7. If desired, press sugar-free candy eyes onto the cookies to give them a spooky Halloween look.

  8. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.

  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
