Ingredients:
- 2 cups almond flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated erythritol or your preferred keto sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar-free chocolate chips
- Optional: sugar-free candy eyes for decoration
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and erythritol until smooth. Add the egg and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the almond flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Fold in the sugar-free chocolate chips until evenly distributed throughout the dough.
Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, leaving some space between each cookie.
