 Cookies Coconut



Ingredients:

  • 1 cup shredded coconut
  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or a low-carb sweetener of your choice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the shredded coconut, almond flour, melted coconut oil, honey or sweetener, vanilla extract, and salt. Mix well until the ingredients are thoroughly combined.

  3. Take tablespoon-sized portions of the dough and shape them into cookies. Place them on the prepared baking sheet, leaving some space between each cookie.

  4. Flatten each cookie slightly with the back of a spoon or your fingers.

  5. Bake in the preheated oven for 10-12 minutes or until the edges turn golden brown.

  6. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
