keto Perfect summer salad 


*Ingredients:

For the Salad:

  • 200g Halloumi cheese, sliced
  • 4 cups mixed salad greens (lettuce, spinach, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved

*For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

*Instructions:

Prepare the Halloumi:

    • Heat a non-stick skillet or grill pan over medium-high heat.
    • Add the Halloumi slices and cook for 2-3 minutes per side, or until golden brown and slightly crispy.
    • Once cooked, set aside.
    • *Assemble the Salad:
    • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
    • *Make the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
    • *Combine and Serve:
    • Add the cooked Halloumi slices to the salad.
    • Drizzle the dressing over the salad and toss gently to combine, ensuring everything is well coated.
