keto Perfect summer salad
*Ingredients:
For the Salad:
- 200g Halloumi cheese, sliced
- 4 cups mixed salad greens (lettuce, spinach, arugula, etc.)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
*For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
*Instructions:
Prepare the Halloumi:
- Heat a non-stick skillet or grill pan over medium-high heat.
- Add the Halloumi slices and cook for 2-3 minutes per side, or until golden brown and slightly crispy.
- Once cooked, set aside.
- *Assemble the Salad:
- In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- *Make the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
- *Combine and Serve:
- Add the cooked Halloumi slices to the salad.
- Drizzle the dressing over the salad and toss gently to combine, ensuring everything is well coated.
