Ingredients:
- 4 large potatoes, peeled
- 1 large onion
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- Vegetable oil for frying
Instructions:
Grate the peeled potatoes and onion using a box grater or a food processor. Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible.
Transfer the squeezed mixture to a large bowl. Add the beaten eggs, flour, salt, and black pepper. Mix well until all ingredients are combined.
In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
Spoon portions of the potato mixture into the hot oil, pressing down with a spatula to flatten them into pancakes. Fry until the edges are golden brown, about 3-4 minutes per side.
Once the latkes are golden and crispy, transfer them to a plate lined with paper towels to absorb any excess oil.
Continue this process until all the potato mixture is used, adding more oil to the pan as needed
