Ingredients:

  • 4 large potatoes, peeled
  • 1 large onion
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions:

  1. Grate the peeled potatoes and onion using a box grater or a food processor. Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible.

  2. Transfer the squeezed mixture to a large bowl. Add the beaten eggs, flour, salt, and black pepper. Mix well until all ingredients are combined.

  3. In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.

  4. Spoon portions of the potato mixture into the hot oil, pressing down with a spatula to flatten them into pancakes. Fry until the edges are golden brown, about 3-4 minutes per side.

  5. Once the latkes are golden and crispy, transfer them to a plate lined with paper towels to absorb any excess oil.

  6. Continue this process until all the potato mixture is used, adding more oil to the pan as needed
