Instructions:

  1. In a shallow dish, mix together the flour, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper.

  2. In another dish, whisk together the eggs and buttermilk.

  3. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.

  4. Dredge each pork chop in the seasoned flour, making sure to coat both sides thoroughly.

  5. Dip the floured pork chops into the egg and buttermilk mixture, allowing any excess to drip off.

  6. Coat the pork chops again in the seasoned flour, pressing the flour mixture onto the chops to adhere.

  7. Carefully place the coated pork chops in the hot oil. Fry for about 5-7 minutes on each side, or until they reach an internal temperature of 5°F (63°C) and are golden brown.

  8. Once cooked, place the pork chops on a paper towel-lined plate to drain any excess oil.

  9. Serve the Southern Fried Pork Chops hot, garnished with chopped fresh parsley if desired.
