  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened

  • 1 cup granulated erythritol or your preferred keto-friendly sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped sugar-free dried cranberries
  • 1/4 cup dark rum (optional)

Instructions:

  1. Preheat your oven to 325°F (163°C) and grease a cake pan.
  2. In a medium bowl, whisk together almond flour, coconut flour, shredded coconut, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and erythritol until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk, and mix until well combined.
  6. If using, stir in the dark rum.
  7. Fold in the chopped pecans, walnuts, and dried cranberries.
  8. Pour the batter into the prepared cake pan and smooth the top.
