Zapiekanka
Ingredients:
For the Mushroom Sauce:
- 2 tablespoons butter
- 1 onion, finely chopped
- 8 oz (225g) mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/2 cup (120ml) heavy cream
For the Zapiekanka:
- Baguette or French bread
- 1 cup (100g) grated cheese (Gouda or mozzarella work well)
- Ketchup (optional, for serving)
- Chopped green onions or chives (for garnish)
Instructions:
1. Mushroom Sauce:
In a pan, melt butter over medium heat. Add chopped onions and cook until softened.
Add mushrooms, garlic, dried thyme, salt, and black pepper. Cook until the mushrooms release their moisture and become golden brown.
Pour in the heavy cream and simmer until the sauce thickens. Adjust the seasoning if needed. Set aside.
2. Preparing the Zapiekanka:
Preheat your oven to 350°F (180°C).
Cut the baguette or French bread in half lengthwise, creating two open-faced halves.
Place the bread on a baking sheet, cut side up.
Spread the mushroom sauce evenly over the bread halves.
Sprinkle grated cheese over the mushroom sauce.
Bake in the preheated oven for about 10-15 minutes or until the cheese is melted and bubbly, and the edges of the bread are crispy.
Remove from the oven and let it cool for a minute.
Optionally, drizzle ketchup over the top and garnish with chopped green onions or chives.
Slice and serve while warm.
