Pork adobo
Ingredients:
- 2 lbs pork belly, cut into 2-inch cubes
- 1 onion, peeled and sliced thinly
- 1 head garlic, peeled and minced
- 1 cup soy sauce
- 1 cup white vinegar
- 1 teaspoon peppercorns
- 3 bay leaves
- 1 cup water
- 2 tablespoons cooking oil (for sautéing)

Instructions:
Marinate the Pork:
- In a large bowl, combine the pork belly, soy sauce, half of the minced garlic, and peppercorns. Massage the marinade into the meat.
- Let it marinate for at least 30 minutes to an hour (overnight for best results).
Sauté the Aromatics:
- In a wide, heavy-bottomed pan or a Dutch oven, heat the cooking oil over medium heat.
- Add the sliced onions and sauté until translucent.
- Add the remaining minced garlic and sauté until fragrant.
Cook the Pork:
- Add the marinated pork to the pan, including the marinade. Allow the pork to brown on all sides.
Simmer with Vinegar and Bay Leaves:
- Pour in the white vinegar and allow it to boil for a few minutes to cook off the strong vinegar taste.
- Add the bay leaves and water. Stir to combine.
Simmer Until Tender:
- Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer until the pork is tender. This may take about 40-50 minutes.
Adjust Seasoning:
- Taste the sauce and adjust the seasoning. You can add more soy sauce or vinegar according to your preference.
