Pork adobo

Ingredients:

  • 2 lbs pork belly, cut into 2-inch cubes
  • 1 onion, peeled and sliced thinly
  • 1 head garlic, peeled and minced
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 1 teaspoon peppercorns
  • 3 bay leaves
  • 1 cup water
  • 2 tablespoons cooking oil (for sautéing)

Instructions:

  1. Marinate the Pork:

    • In a large bowl, combine the pork belly, soy sauce, half of the minced garlic, and peppercorns. Massage the marinade into the meat.
    • Let it marinate for at least 30 minutes to an hour (overnight for best results).
  2. Sauté the Aromatics:

    • In a wide, heavy-bottomed pan or a Dutch oven, heat the cooking oil over medium heat.
    • Add the sliced onions and sauté until translucent.
    • Add the remaining minced garlic and sauté until fragrant.
  3. Cook the Pork:

    • Add the marinated pork to the pan, including the marinade. Allow the pork to brown on all sides.
  4. Simmer with Vinegar and Bay Leaves:

    • Pour in the white vinegar and allow it to boil for a few minutes to cook off the strong vinegar taste.
    • Add the bay leaves and water. Stir to combine.
  5. Simmer Until Tender:

    • Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer until the pork is tender. This may take about 40-50 minutes.
  6. Adjust Seasoning:

    • Taste the sauce and adjust the seasoning. You can add more soy sauce or vinegar according to your preference.
