Ingredients:
- 4 large potatoes (russet potatoes work well)
- 2 cups cheese curds (white cheddar is a good choice)
- 2 cups beef or chicken gravy
- Salt to taste
- Vegetable oil for frying
Instructions:
Prepare the Potatoes:
- Peel the potatoes and cut them into thin fries. You can use a knife or a french fry cutter.
- Rinse the fries in cold water to remove excess starch.
- Pat the fries dry with a clean kitchen towel.
Fry the Potatoes:
- Heat vegetable oil in a deep fryer or a large, deep pan to around 350°F (175°C).
- Fry the potatoes in batches until golden brown and crispy, usually for about 3-4 minutes per batch.
- Remove the fries and place them on a paper towel-lined plate to absorb excess oil.
- Sprinkle the fries with salt while they are still hot.
Prepare the Gravy:
- While the fries are frying, prepare your preferred beef or chicken gravy according to the package instructions or make it from scratch.
Assemble the Poutine:
- Place a portion of the hot fries on a serving plate or dish.
- Sprinkle a generous amount of cheese curds over the hot fries.
- Pour hot gravy over the fries and cheese curds, making sure the cheese starts to melt.
- Serve immediately while it's hot.
