Primavera Pasta Salad
Ingredients:
- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup blanched broccoli florets
- 1/2 cup black olives, sliced
- 1/2 cup each red and yellow bell peppers, sliced
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped

Dressing:
- 1/3 cup olive oil
- 3 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Cook rotini pasta according to package instructions; drain and rinse with cold water.
- Combine pasta, cherry tomatoes, broccoli, olives, bell peppers, cucumber, red onion, and parsley in a bowl.
- Whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
- Pour the dressing over the pasta and vegetables; toss to coat evenly.
- Refrigerate for 1-2 hours to allow flavors to meld.
