Primavera Pasta Salad


Ingredients:

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup blanched broccoli florets
  • 1/2 cup black olives, sliced
  • 1/2 cup each red and yellow bell peppers, sliced
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing:

  • 1/3 cup olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Cook rotini pasta according to package instructions; drain and rinse with cold water.
  2. Combine pasta, cherry tomatoes, broccoli, olives, bell peppers, cucumber, red onion, and parsley in a bowl.
  3. Whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta and vegetables; toss to coat evenly.
  5. Refrigerate for 1-2 hours to allow flavors to meld.
