For the Rhubarb Custard Filling:

  • 2 cups chopped rhubarb
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.

  2. In a mixing bowl, combine the flour, softened butter, and powdered sugar for the crust. Mix until crumbly. Press the mixture into the bottom of the prepared baking dish.

  3. Bake the crust in the preheated oven for 15-20 minutes or until it's lightly golden. Remove it from the oven and let it cool slightly.

  4. While the crust is cooling, prepare the rhubarb custard filling. In a bowl, toss the chopped rhubarb with 1/2 cup of granulated sugar and set it aside.

  5. In another bowl, whisk together the remaining sugar, flour, baking powder, and salt. Add the eggs and vanilla extract, mixing until well combined.

  6. Gently fold in the rhubarb mixture into the custard mixture. Pour the filling over the partially baked crust.

  7. Bake in the oven for 40-45 minutes or until the top is set and lightly browned.

  8. Allow the rhubarb custard bars to cool completely in the baking dish before cutting them into squares.
