Ingredients:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1/2 cup melted unsalted butter
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.

  2. In a large bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, baking soda, and salt.

  3. In another bowl, beat the eggs, then add almond milk, melted butter, and vanilla extract. Mix well.

  4. Pour the wet ingredients into the dry ingredients and stir until well combined.

  5. Transfer the batter to the prepared cake pan and smooth the top.

  6. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool completely before slicing.
