 Chicken Noodle Soup


Chicken noodle soup is a classic comfort food, especially during cold or sick days. Here's a basic recipe for homemade chicken noodle soup:

Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth
  • 2 cups water
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups egg noodles or your favorite pasta
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. In a large soup pot, combine the chicken broth and water. Bring it to a boil.

  2. Add the chicken breasts or thighs to the boiling liquid. Reduce the heat to a simmer, cover, and cook for about 20-25 minutes, or until the chicken is fully cooked.

  3. Remove the chicken from the pot and shred it using two forks. Set the shredded chicken aside.

  4. In the same pot, add the sliced carrots, celery, chopped onion, and minced garlic. Cook over medium heat until the vegetables become tender, which takes about 10-15 minutes.

  5. Add the shredded chicken back to the pot.

  6. Stir in the egg noodles (or pasta of your choice), bay leaf, and dried thyme. Simmer for about 10 minutes or until the noodles are cooked.

  7. Season the soup with salt and pepper to taste. Remember to remove the bay leaf before serving.

  8. If you like, garnish the soup with fresh chopped parsley for a burst of color and flavor.
