Keto Thai Peanut Chicken

 

Ingredients:

For the Thai Peanut Sauce:

  • 1/4 cup natural creamy peanut butter (unsweetened)
  • 2 tablespoons coconut aminos (or soy sauce if not strictly keto)
  • 2 tablespoons unsweetened almond butter
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (adjust to your spice preference)
  • 1-2 tablespoons water (to thin the sauce)
  • Salt and pepper to taste

For the Chicken:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon coconut oil (or other keto-friendly cooking oil)
  • Salt and pepper to taste
  • Chopped green onions and chopped peanuts for garnish (optional)
  • Cauliflower rice or zucchini noodles for serving

Instructions:

  1. In a mixing bowl, whisk together all the ingredients for the Thai Peanut Sauce: peanut butter, coconut aminos (or soy sauce), almond butter, rice vinegar, sesame oil, grated ginger, minced garlic, red pepper flakes, and water to achieve your desired consistency. Season with salt and pepper to taste. Set aside.

  2. Season the chicken pieces with salt and pepper.

  3. In a skillet or wok, heat the coconut oil over medium-high heat. Add the chicken and cook until it's browned and cooked through, about 5-7 minutes.

  4. Pour the Thai Peanut Sauce over the cooked chicken, stirring to coat the chicken in the sauce. Cook for an additional 2-3 minutes to heat the sauce through.

  5. Serve the Keto Thai Peanut Chicken over cauliflower rice or zucchini noodles.

  6. Garnish with chopped green onions and chopped peanuts if desired.
