Oatmeal raisin cookies
Ingredients:
- 2 cups almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup granulated erythritol or your preferred keto-friendly sweetener
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup melted coconut oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup raisins (make sure they're unsweetened and keto-friendly)
Instructions:
- 1*Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2*In a large bowl, combine almond flour, shredded coconut, erythritol, baking soda, and salt.
- 3*In a separate bowl, whisk together melted coconut oil, egg, and vanilla extract.
- 4*Add the wet ingredients to the dry ingredients and mix until well combined.
- 5*Fold in the raisins.

- 7*Flatten each cookie slightly with the back of a spoon or your fingers.
